This is a great one-pot meal for the times you need help to make everything from scratch. Be sure to use a quality alfredo sauce.
ingredients
1 tablespoon
butter
1 shallot, finely chopped
1 garlic clove, finely chopped
1 teaspoon dried thyme leaves
4 cooked chicken breast fillets, diced
2 cups broccoli florets, cooked or frozen and defrosted
1 -12 oz pkt cheese tortellini
1 - 15 oz jar of quality store-bought Alfredo sauce, see photo of my favorite brand
Garnish
grated parmesan
chopped parsley leaves
chopped fresh chives
Directions
Cook the tortellini in boiling salted water in a medium Dutch Oven according to package directions.
In the empty pasta pot, heat the oil over medium-high heat. Add the shallot and garlic. Cook, stirring often, for 5 minutes or until softened. Add the thyme, broccoli, and chicken. Cook, stirring, for 3 minutes or until chicken is hot.
Add the A;fredo sauce and heat gently over low heat.
Add the tortellini and stir the pasta into the sauce.
Serve in pasta bowls and garnish with fresh herbs and Parmesan cheese
