Tuna Pasta Salad
Ingredients
8 oz shell pasta, cooked and drained
2-5 oz packages of white tuns, drained
1 small carrot shredded
¼ of a red onion, finely chopped
¼ of a bell pepper, finely chopped
¼ of an English cucumber, finely chopped
1 cv\celery stalk, finely chopped
Salt to taste
1 cup mayonnaise
1 tablespoon lemon juice
Directions
Combine all the ingredients in a serving bowl. Cover and chill for several hours.
Serve with fresh cantaloupe, sliced tomatoes, and hot biscuits.
Change it up:
Serve stuffed cucumbers
With the leftover pasta salad on another night.
Stuffed Cucumber
2 servings
Ingredients
1medoum, fat cucumber, peeled, cut in half, and seeds removed
Salt
Paprika for garnish
Filling
2 green onions, finely chopped
1 small celery stalk, finely chopped
1 jalapeño pepper. Seeded and finely chopped
2 dry-packed sun-dried tomatoes, finely chopped
¼ cup cream cheese, at room temperature
1 tablespoon Sour cream
Pinch of salt
¼ teaspoon Dried dill
Directions
Salt the insides of the cucumber halves. Turn them over on a paper towel for 30 minutes.
Mix the filling ingredients together in a small bowl and chill in the refrigerator while the cucumbers
Drain.
Wipe the cucumber halves dry with a paper towel.
Fill the cucumber halves with the cream cheese mixture and sprinkle with paprika.
Serve with the pasta salad.
