Pasta With Italian Sausage, Zucchini And Peppets

 



Ingredients


¼ cup olive oil 

2 large zucchini, sliced in half moons about ¼. Inch thick

½ lb cooked Italian sausage, any kind- pork, turkey or chicken, sliced

1 large red bell pepper cut into 1-inch pieces 

1 large onion, diced

4 garlic cloves, chopped

1teadpoon dried Italian seasoning 

1lb fettuccine 

24 oz Marinara sauce

1cup grated Parmesan cheese


Directions


Heat the oil in a large deep skillet. Add salt to taste. Cook the zucchini in a single layer until brown. Drain and reserve.

Add onions, peppers, and garlic. Sauté until tender. Add salt, marinara sauce, sliced sausage, and Italian seasoning.

Reduce heat to a simmer, cover the pan, and simmer until the pasta cooks.

When the pasta is al dente, scoop out the pasta into the sauce with a spaghetti fork or spider!. let the pasta cook in the sauce for several minutes. Add the cheese and serve on pasta bowls.
